This meal is the most gratifying breakfast possible since it combines the best of smashed burgers, tacos, and frico. Every layer of this taco is complemented by the following layer, beginning with the earthy paprika-forward chorizo and ending with the crunchy cheddar frico, creamy egg yolk, and acidic herb salsa that completes the overall product.
First things first: before you get started, let’s go over a few things that you need to keep in mind.
Ingredients
- 16 oz. Mexican chorizo, divided
- 8 (6″) flour tortillas
- 1/2 c. finely chopped fresh cilantro
- 1/2 c. sliced scallions
- 1/4 c. extra-virgin olive oil
- 1 1/3 c. shredded white cheddar
- 8 large eggs
- 1/4 c. white wine vinegar or white balsamic vinegar
- 1 Tbsp. crumbled cotija or Greek feta cheese
- Zest of 1 lime

Step 1
After placing a mound of chorizo that weighs two ounces in the middle of each tortilla, stretch it out toward the edges.
Step 2
One tortilla sausage should be arranged with the sausage side down in a medium nonstick pan and cooked over medium-high heat. While cooking, push down to produce a smash taco effect. The meat should be cooked for one to two minutes, until it becomes firm and golden brown.
Flip the tortilla with a heat-resistant spatula and continue cooking for about one minute longer, or until the tortilla has a light golden color. Place the sausages with the sausage side up on a baking sheet or dish. Proceed in the same manner with the remaining tortillas.
Step 3
Set the temperature to medium. In the middle of the pan, sprinkle a quarter cup of cheddar cheese. As soon as the cheese starts to melt, the shreds begin to clump together, and a thin skin begins to develop on the bottom of the cheese, break one egg into the middle of the cheese that is melting. By using your spatula to press some egg around the borders of the cheese, you may hope to retain the egg on top of the cheese.
Remove the cheese from the pan and arrange it on top of a sausage tortilla after the cheese has begun to brown and crust around the edges and the egg white has reached the desired consistency. Repeat the process with the remaining eggs and cheese.
Step 4
To make the salsa, mix together the cilantro, scallions, oil, vinegar, cotija, and lime zest in a small basin. Tacos should be topped with the cilantro mixture.
