When it comes to wings, buffalo sauce is a tried-and-true classic, but what if you’re in the mood for something different? After being coated in a glaze that is both sweet and zesty, these wings made with coconut lime are giving Buffalo and blue cheese wings a run for their money.

Ingredients
- 2 lb. chicken wings, flats and drumettes separated
- Cooking spray
- 1/2 c. full-fat canned coconut milk
- 1/3 c. honey
- 2 tsp. baking powder
- 2 1/2 tsp. kosher salt, divided
- 2 Tbsp. fresh lime juice, plus finely grated lime zest for serving
- 3/4 tsp. smoked paprika
Directions
Step 1
In a large baking sheet, place a wire rack in the center. Chicken wings, baking powder, and two teaspoons of salt should be mixed together in a large basin. Place the wings on the rack in a single layer with the skin side facing up. Place in the refrigerator, uncovered, for at least eight hours and up to twenty-four hours.
Step 2
Place a rack in the middle of the oven and preheat it to 425 degrees. In order to spray the naked side of the wings with cooking spray, move them to one side of the rack. After moving the wings to the other side of the rack, spray the second side that is naked with cooking spray. Once again, spread the wings out in a single layer.
Step 3
Bake the wings for forty to fifty minutes, or until they are crisp and complete.
Step 4
A small saucepan should be used to bring milk, honey, lime juice, paprika, and half a teaspoon of salt to a simmer over medium-high heat. This should be done when the wings are almost cooked. Cook, stirring periodically, for about five minutes, or until the liquid thins down to a glaze.
Step 5
Switch on the broiler. Place the wings that have been roasted in a large basin. Rub the glaze all over and toss to evenly coat. Prepare the rack by placing the wings in a single layer.
Step 6
Watch it carefully and broil it for one to two minutes, until it begins to bubble and color in some areas.
Step 7
Place wings on a dish and set aside. Add some lime zest on top.
