Ingredients
- 2 c. (16 oz.) ricotta
- 1 c. shredded mozzarella
- 1/2 c. finely grated Parmesan
- 2 cloves garlic, finely chopped
- 1 Tbsp. chopped fresh parsley
- 1 tsp. paprika
- 16 (1″-long) thin pretzel sticks
- 1 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1 (16.3-oz. tube) Pillsbury Grands Southern Homestyle Biscuits
- 1 c. (1/2 stick) unsalted butter
- Marinara sauce, for serving
Directions
Step 1
Ricotta, mozzarella, Parmesan, salt, and pepper should be mixed together in a bowl of intermediate size. Wrap with plastic wrap and place in the refrigerator until you are ready to use it.
Step 2
Cut the biscuits into sixteen pieces, and then use your hands to shape each one into a ball. Each ball should be rolled out to a circle that is between 3 1/2 and 4 inches in diameter.
Step 3
One tablespoon of the ricotta mixture should be placed in the middle of each round. Squeeze the sides of the dough together to seal it. The bottom of the dough should be flattened by applying little pressure. Transfer to a baking sheet that has been lined with parchment paper. The following rounds should be repeated. Cool in the refrigerator for about twenty minutes.
Step 4
Preheat the oven to 350 degrees Fahrenheit. Cut sixteen lengths of kitchen twine that are about 17 and 20 inches long. A single strip of twine should be laid out on a cutting board. A single piece of packed dough should be placed in the middle of the string. To make the dough, first loosely wrap it around, then turn it over and knot it as if you were tying a bow around a present.
In order to make the dough resemble like a pumpkin, turn it over and wrap string around it one more time. In order to secure it, tie a loose knot. Do away with any surplus thread. Carry out the process with the leftover packed dough and thread. Place on a baking sheet that has been lined with parchment paper, leaving a gap of one to two inches between each item.

Pumpkins should be baked for about 15 minutes, or until they reach a golden brown color.
